It simple comforting and made with love and that what make it so delicious. Whether it a family lunch a quick dinner or even a light week meal Baingan Bharta alway feel like home.
The Story Behind My Dish
I learn this recipe from my mother who often made it during the winter season. The smell of roast eggplant would fill the kitchen and we eagerly wait to enjoy it with freshly made roti. It amazing how such humble ingredient can create something so rich in taste and memory.
What is Baingan Bharta?
Baingan Bharta is a traditional dish made by roasting eggplant until soft and smoky then mashing and mixing it with sautéed onions tomatoes and spices. It’s typically enjoyed with roti paratha or even plain rice.The secret to a great Baingan Bharta lies in roasting the eggplant well to infuse that distinct smoky aroma it’s the soul of this dish.

Ingredients You will Need
Here what you will need to make a simple and flavorful Baingan Bharta:
1 large eggplant
1 medium onion
1 medium tomato
2–3 garlic cloves
1–2 green chilies
Salt to taste
½ teaspoon red chili powder
¼ teaspoon turmeric powder
Fresh coriander leave
2 tablespoons cooking oil
Step by Step Recipe
Step 1: Roast the Eggplant
Roast the whole eggplant directly on the gas flame until the skin is fully charre and the flesh become soft. This take about 10–15 minute on medium flame.Once it done let it cool for a few minute peel off the skin and mash the soft pulp thoroughly.
Tip: Prick the eggplant with a fork before roasted to help it cook evenly.
Step 2: Saute the Base
In a pan heat the oil and add finely chop onion. Saute until they turn golden brown.
Then add garlic and green chilie and cook for a minute until fragrant.
Step 3: Add Tomatoes and Spice
Add the chop tomato salt red chili powder and turmeric. Mixed well and cook until the tomato break down and the masala is thicked and glossy.
Step 4: Add the Eggplant
Now add the mash eggplant and stir it well into the mixture. Cook on medium heat for 5-7 minute stirr occasionally.
Step 5: Final Touch
Garnish with freshly chop coriander leave. Serve hot with chapati roti or paratha for the best experience.

This dish is very popular in our country too. I eat it often. I really like eggplant. Eggplant chop, eggplant stuffing, eggplant-based fish stew, eggplant fry. Every dish is very tasty.
