I’m @isha-rehman and today I’m delighted to share with you a simple yet deeply flavorful dish that holds a special place in many South Asian homes Egg Curry or as we lovingly call it in Urdu Anday Ka Salan. This post is part of my submission to the Steemit Iron Chef Challenge and I couldn’t think of a better recipe to share. It's comforting nourishing and comes together with ingredients that are often already in your kitchen.

Why Egg Curry?

When we think about comfort food we often think of dishes that bring warmth are easy to prepare and remind us of home. Egg Curry is exactly that. Whether you are low on grocerie or in a hurry this dish saved the day. In our home it one of those go to meal when we want something delicious and filling but dont want to spend too much time cook. It pair perfectly with steam rice roti or paratha making it incredibly versatile.

Ingredients

Below are the ingredient you will need to prepare 3-4 serving of this hearty curry:

Eggs
Onions – 2 medium
Tomatoes – 2 medium
Green chilies
Garlic paste – 1 teaspoon
Ginger paste – 1 teaspoon
Salt – to taste
Red chili powder – 1 teaspoon
Turmeric powder – ¼ teaspoon
Coriander powder – 1 teaspoon
Cumin seeds – ½ teaspoon
Garam masala – ½ teaspoon
Yogurt – 2 tablespoon
Cooking oil – 3 to 4 tablespoon
Water – 1 to 1½ cups

Step by Step Instruction

Here’s how I make this rich homestyle Egg Curry:

Step 1: Boiled the Egg

Place the egg in a sauce pan and covered with water. Boil for about 10 minute until they are hard boil. Drain and rinse under cold water. Gently peel the egg and set aside. Lightly fry the egg in a teaspoon of oil until they develop golden blister. This help them absorbed the curry flavor and give a delicious texture.

Step 2: Prepared the Curry Base

In a deep pan or pot heated the oil on medium heat. Add the cumin seed and let them crackle for a few second. Add slice onion and saute until golden brown. This step is crucial the color of the onion determine the richness of the curry. Add ginger and garlic paste stir and cook for 1–2 minute until the raw smell disappear.

Step 3: Build the Masalas

Add chopped tomatoes to the pan and stir well. Cook until the tomatoes become soft and the oil begins to separate from the sides.
Now add all the dry spices:
Red chili powder
Turmeric powder
Coriander powder
Salt

Mix everything thoroughly and let it simmer on low heated for 4–5 minute. Add 2 tablespoon of yogurt for a creamy texture. Stir until it completely blend and smooth.

Step 4: Add Water

Pour in 1 to 1½ cup of water depend on how much curry you want. Bring to a gentle boiled and let it simmer for another 5 minute so the spice blended with the water and form a rich gravy.

Step 5: Add the Egg

Carefully add the boil egg into the simmering gravy. Let them cook for 6–7 minute so they absorbed the spicy flavored of the curry. Stir occasionally but gently to avoided breaking the egg.

Step 6: Finished with Flavor

Sprinkle garam masala overed the curry. Add green chilie for an extra kick (optional). Garnish generously with fresh chop coriander leave. Cover the pan for a few minute so the flavor settle.

Serving Suggestions

This curry tastes best when served hot and fresh. Here how I usually serve it:

1.With steam basmati rice perfect for soaking up the flavor gravy.
2.With roti or naan for a more traditional desi meal.
3.With paratha for a richer slightly indulgent option.
You can also paired it with a side of raita or salad for a balance meal.

Cook doesnt alway have to be complicate. Sometime all you need is a handful of humble ingredient a little love and some time in the kitchen to make something truly heartwarming. Egg Curry is one of those dishes a regular in many households and yet always satisfying.
