The other day I had another go at making a cake using cottage cheese. I have tried this sort of recipe before here but this recipe uses 100g butter.
The photo below shows you what half of the caked looked like - the other half was already eaten !

As usual I modified the recipe a bit by adding soft fruit rather than raisins to the mixture. I always like blueberries but I’m not so sure about gooseberries. I find they can be a bit of a struggle to eat as they are often so tart. I also used 13g of desiccated coconut to make up the 150g of flour. I added the baking powder to the flour rather than at the end - that step looked a bit odd on the video and almost like an afterthought.
One interesting point is that the recipe refers to 130g of 5 per cent cottage cheese. I had never heard of this before so I had to look it up. Here I read that it refers to the amount of fat, my tub of cottage cheese was low fat (as usual) so it would be interesting to see what sort of difference it makes in taste and texture. One day I'll try using 5% cottage cheese (if I can find it in Lidl's ! ).
Anyway the cake didn’t rise much at all as you can see but if you look at the ingredients you’ll see that the recipe doesn’t include butter but only 80 ml of sunflower oil. Normally cake recipes can have over 100g of butter so I reckoned that amount of oil was fair. As I didn't have sunflower oil handy I replaced it with 'olive oil' - to avoid any odd taste I added a teaspoon of vanilla extract which was not included as part of the recipe.
