Hello my friends, today I will post another vegetarian/vegan recipe for you (the original recipe is good for vegan diet, but the alternative recipe can only be used by vegans if one skip the oyster sauce and use the mushroom sauce instead).

This is not an indonesian dish but a chinese recipe from Sichuan region. Neverthless it is quite popular in my homeland because we have so many fellow citizens with chinese origin.
Now let's jump to the recipe!

For the tofu:
-1 block medium-firm tofu (400g) -2 tbsp corn starch or potato starch -2 tbsp cooking oil

Pad the tofu using kitchen paper gently until it's dry then dice it (ca. 2 cm each side)!
Coat the diced tofu with starch and set it aside in the fridge for a while then pan fry them until becoming golden brown!
Start with a over high heat then turn the heat to medium when the tofu start to brown. Set a side.
While browning the tofu you can prepare the sauce.
The ingredients are as follow:
-1 tbsp cooking oil
-1 tsp minced ginger or 1 cm long sliced ginger .
-1 tbsp minced garlic -2 fresh chilli, finely chopped, or to taste (optional) -1/2 tbsp Sichuan chilli bean paste -1 1/2 tbsp Shaoxing rice wine -1 1/2 tbsp black rice vinegar -1 tbsp sugar or honey -3 tbsp water -1 tbsp corn starch -1 stalk scallions, finely chopped

Instruction:
1. Mix the ricewine, rice vinegar, sugar, water and cornstarch.
2. Stir fry the garlic, ginger, chili and Sichuan bean paste (doubanjiang) with medium heat until fragrant.
3. Stir the previously mixed sauce and pour it into the pan/wok.
4. Add the pan fried tofu into the pan and stir them evenly. When the sauce get thickened and the tofu is coated well with the sauce, then the dish is done.
Serve the tofu and sprinkle the finely chopped scallion and sesame seed on the dish.

Note: This is a Sichuan style of pan fried tofu, so I also used the original Pixian Douban (spicy fermented Sichuan blackbeansauce), original Chinkiang black rice vinegar as well as Shaoxing rice wine.

In Germany supermarkt one can find Sichuan style blackbean paste from Lee Kum Khee, it's Hongkong brand and I don't really like it as it contains too many additive substance not like the traditional recipe of Sichuan.
However it's better than nothing. Shaoxing wine can be replaced by dry sherry and normal rice vinegar will do too.
If you really can't find any fermented blackbean paste at all, you can just skip it and add 1 tablespoon of soy sauce, 1/4 teaspoon salt and 1 tablespoon on oyster sauce instead.

It's not a Sichuan style pan fried tofu (鱼香豆腐) anymore of course, but it will taste just as good as the sichuan style one.

Hallo meine Freunde, heute werde ich ein weiteres vegetarisch/veganes Rezept für euch posten (das Originalrezept ist gut für die vegane Ernährung, aber das Alternativrezept kann von Veganern nur verwendet werden, wenn man die Austernsoße vermeidet und stattdessen die Pilzsoße verwendet). Dies ist kein indonesisches Gericht, sondern ein chinesisches Rezept aus der Region Sichuan. Nichtsdestotrotz ist es in meinem Heimatland recht beliebt, weil wir so viele Mitbürger chinesischer Herkunft haben. Kommen wir nun zum Rezept! Für den Tofu: -1 Block mittelfester Tofu (400g) -2 EL Maisstärke oder Kartoffelstärke -2 EL Speiseöl *Füllt den Tofu mit Küchenpapier vorsichtig aus, bis er trocken ist und würfelt ihn dann in Würfel (ca. 2 cm pro Seite)! *Tofuwürfel mit Speisestärke bestreichen und eine Weile in den Kühlschrank stellen, dann in der Pfanne goldbraun braten! *Beginnt mit einer hohen Hitze und dreht den Hitzeregler auf mittlere Stufe, wenn der Tofu anfängt, braun zu werden! Legt sie zur Seite! Während ihr den Tofu anbrat, könnt ihr die Sauce zubereiten. Die Zutaten sind wie folgt: -1 Esslöffel Speiseöl -1 Teelöffel gehackter Ingwer oder 1 cm langer Ingwer in Scheiben geschnitten . -1 Esslöffel gehackter Knoblauch -2 frische Chilischoten, fein gehackt, oder nach Geschmack (nicht zwingend) -1/2 Esslöffel Sichuan-Chili-Bohnenpaste (Doubanjiang) -1 1/2 Esslöffel Shaoxing Reiswein -1 1/2 Esslöffel Chinkiang schwarzer Reisessig -1 Esslöffel Zucker oder Honig -3 Esslöffel Wasser -1 Esslöffel Maisstärke -1 Stängel Frühlingszwiebeln, fein gehackt Anweisung: 1. Reiswein, Reisessig, Zucker, Wasser und Maisstärke mischen. 2. Knoblauch, Ingwer, Chili und Sichuan-Bohnenpaste (Doubanjiang) bei mittlerer Hitze unter Rühren braten, bis sie duften. 3. Die zuvor gemischte Sauce umrühren und in die Pfanne/Wok geben. 4. Fugt der Pfanne gebratenen Tofu in die Pfanne hinzu und verrührt ihn gleichmäßig. Wenn die Soße bereits dick flüssig und der Tofu gut mit der Soße bedeckt ist, ist das Gericht fertig. Serviert den Tofu und streut die fein gehackte Schalotte und den Sesamkörner auf das Gericht. Hinweis: Dies ist ein in der Pfanne gebratener Tofu nach Sichuan-Art, daher habe ich auch den originalen Pixian Douban (scharfe fermentierte Sichuan-Schwarzbohnensauce), original Chinkiang-Schwarzreisessig sowie Shaoxing-Reiswein verwendet. Im deutschen Supermarkt findet man oft Schwarzbohnenpaste nach Sichuan-Art von Lee Kum Khee, es ist eine Marke aus Hongkong, und ich mag sie nicht wirklich, da sie zu viele Zusatzstoffe enthält, die nicht dem traditionellen Rezept von Sichuan entsprechen. Aber sie ist besser als nichts. Shaoxing Wein kann durch trockenen Sherry ersetzt werden, und normaler Reisessig reicht auch. Wenn ihr wirklich überhaupt keine fermentierte Schwarzbohnenpaste findet, könnt ihr sie einfach überspringen und stattdessen 1 Esslöffel Sojasoße, 1/4 Teelöffel Salz und 1 Esslöffel Austernsoße hinzufügen. Es ist natürlich kein in der Pfanne gebratener Tofu nach Sichuan-Art (鱼香豆腐) mehr, aber er wird genauso gut schmecken wie der Tofu nach Sichuan-Art. But if you use this as the only dish served with plain steamed rice, then I suggest you to marinate the tofu with light soy sauce first before coating them with starch. This way the tofu will be a little bit saltier. I like light taste but I think Germans tend to like more salt than most Asians, but each individuals are different afterall, so I suggest you to adjust the saltiness by your self. Slowly you can find the right amount of salt needed according to how you enjoy the dish (I mean, whether you use this as a side dish or main dish). See you again soon in my next post!
