Egusi Soup in just 5 Minutes!

Hello friends,

What would life be like without food? It's truly my obsession, and if I go a day without it, I might need to see my doctor.

Today, I'm making a well-known dish from my country, "Egusi soup" (Melon soup). It can be prepared for special occasions or just at home, and it's great with fufu, garri, pando, or rice. There are various ways to make this soup, but I love this easy method that has me drooling in just 5 minutes.

Egusi soup ingredients

• Egusi (Melon)
• Palm oil
• Meat/Chicken
• Fish (dried, stock)
• Pepper
• Crayfish
•Spice

Steps

• Add the grinded melon in a bowl, add a little water and stir. Stir well until you have a smooth paste.

• Wash your meat and fish with salt and water. Put them in a pot, add some cooking ingredients and set on fire to cook. Add water if possible and allow to cook well.

• Add palm oil to the boiling stock and cover to cook for 1 minute. Add the remaining cooking ingredients and cover to cook.

• Now, gently scoop the egusi (melon) paste little by little and add into the pot. All all the melon paste and cover to cook for some time.

• Stir the soup to check the melon. If the melon is still in big balls, then you need to break them using your cooking spoon to have them in smaller balls.

• Wash the veggies with salt and clean water. slice the veggies with a cutting board and set aside.

• Check if the melon is ready, if yes, add the sliced veggies and cover to cook for some time. You can stir to combine the veggies to the soup.

• Finally, you can taste for salt and adjust your soup if need be. Serve with any swallow of your choice or with boiled rice,the choice is yours.
